"The word "Maundy" comes from the Latin mandatum, which means 'commandment.' It alludes to Jesus' new commandment in John 13:34 to love one another, which He gave after He had washed His disciples' feet" (Maschke, Gathered Guests, p. 267).
This commandment was given by Jesus to His disciples on the Thursday before His crucifixion.
